Chaume des Perrières is made from Chardonnay grown on 1er Cru Perrières in Meursault, and whose average age is 40 years. Located 50 meters in the Perrières vineyard, just above the Coche-Dury vineyards, the vines have very deep roots. The harvest is manual, then the grapes are put in direct pressing for two hours and the vinification is carried out in stainless steel tanks for 4 months. The wine is then aged on the lees in barrels for 12 months (40% new oak, 60% barrels of 1-2 years).
