- Limestone: Known locally as caillottes.
- Kimmeridgian marl: A clay-limestone soil also called terres blanches.
- Flint: Known as silex.
- Winemaking: Lesimple practices minimal intervention in the vineyards to ensure environmental respect and maximize grape quality. The wine is fermented in thermoregulated vats and often aged for a short period before bottling.
