Description

Gonzalez Byass Alfonso Oloroso Seco is a dry, fortified sherry from Jerez, Spain, known for its complex nutty and savory characteristics. Unlike finos and manzanillas, which age under a protective layer of yeast called flor, olorosos age oxidatively. This process gives the sherry a rich, darker color and a wide array of flavors.

Winemaking

  1. Grape variety: Made from the Palomino Fino grape, which is also used for many other types of sherry.
  2. Oxidative aging: The wine is fortified to about 18% ABV after fermentation. It then ages in American oak casks through the traditional solera system, where younger and older sherries are systematically blended over an average of eight years. Because the wine is not protected by flor yeast, it is exposed to oxygen, which results in its distinctive tawny color and nutty flavors.

Tasting notes

  1. Appearance: A brilliant deep amber or mahogany color.
  2. Aromas: Characterized by intense, earthy, and oxidized aromas of toasted nuts, like hazelnut and almond, as well as dried fruit, toffee, and caramel.
  3. Palate: Dry but not bone dry, with pronounced flavors that confirm the nose. Expect rich notes of nuts, caramel, and savory elements, with a smooth texture and lingering finish.
  4. Finish: The finish is long and persistent, with a pleasant bitterness and nutty richness.

Alfonso Oloroso Seco is a very versatile food wine, with its rich, savory profile pairing well with a range of dishes.

  1. Meats: Excellent with rich stews, cured meats like jamón ibérico or chorizo, and gelatinous meats like oxtail or pork cheeks.
  2. Cheese: Pairs well with aged and hard cheeses, such as Manchego, and pâtés.
  3. Soups and Stews: Can be used to add depth and complexity to rich soups and stews, especially those with mushrooms.
